A bit of a do at Felton & Thirston – Ann Lings
The ladies of Felton and Thirston WI met on a treacherous December evening to celebrate the life of our dear member and former President June May who died in 2022.
June left a legacy to us and asked that we had a ‘bit of a do’ which we certainly did. No icy blast was going to stop us. Food was collected from a local supermarket; the hall was decorated, and drinks imbibed. The entertainment
had cancelled as they were snowed in. So, in true indomitable style, we carried on and managed a quiz, poems and a whole lot of chattering! Food was delivered the following day to those who were not able to leave their home the previous evening.

Handy Crafters at Hespcott – Sandra Armstrong
Members of Hepscott WI have used their creative talents recently , where a group of crafters got together to design a series of panels to hang in our village hall as a memorial of our continuous links to the hall. A variety of techniques were used to c reate four panels to represent the village , which are :
1. A record of the nam es of houses in the village pre WW2.
2. A series of activities (non WI) which take place in the hall e.g., harp lessons, quilters, and bridge.
3. A panel devoted to the WI e.g. The words of Jerusalem and our trees in the orchard .
4. A map of the village street featuring landmarks such as the railway, burn and of course the village hall.
We used our collective skills again in November when we held a festive craft day with a range of handmade gifts on sale; cards, jewellery, knitwear etc. we were very pleased to welcome our Federation Chairman Marj Read who admired our new panels and did some Christmas shopping.

North Shields WI get a cookin – Claire
WI members decided to pool our favourite recipes and produce a North Shields WI recipe booklet. Here’s three we thought we’d share.
Beano Pie
1 medium onion, 4 rashers of bacon, 8oz (225g) grated cheese, 1 large tin of baked beans, 1oz (25g) butter or marg (optional), 1 egg, dash of milk, 2 or 3 potatoes, boiled and mashed. One oven proof dish.
Peel onion and chop. Rind and cut the bacon into small pieces. Grate cheese and beat egg. Gently cook the onion and bacon in a pan. Add some fat if needed. Add the beans, stir and put into oven proof dish. Boil and mash the potatoes, mix in milk, egg, and butter. Put cheese on top and grill. If you wish, mushrooms and tomatoes can be added to bean mix.
Apple Crisp
4oz marg, 2 tablespoons milk, 3 medium apples, 2oz sugar
3/4 teaspoon cinnamon, 3oz SR flour, 3oz rolled oats (porridge oats), 1/2 teaspoon bicarb of soda
Melt margarine in a pan, add the milk, sugar, flour and oats. Dissolve the bicarb in a little water and add to the mixture. Chop 3 eating apples up and mix in with the cinnamon and the rest of the mixture. Bake in a well-greased pie dish, 30 minutes 160 degrees fan oven.
Slow cooker chocolate fudge
500g chocolate (not cooking chocolate), 397g tin condensed milk, 15g butter, Maltesers, crunchie bar or any sweets of your choice (optional).
Preheat slow cooker on high for 20 mins. Turn to low and add condensed milk, butter and chocolate. Cook on low for one hour, stirring every 15 minutes. Line a tin approx 27 cm x 17 cm using a long strip of grease proof paper. When fudge cooked and thickened stir in 1/2 crushed sweets if using. Pour into lined tin and spread. Decorate with remaining sweets and drizzle with chocolate. Put in fridge to cool completely before eating.
